I processi di trattamento delle barbabietole si differenziano a seconda della tipologia, in quelle destinate all'alimentazione si hanno i classici trattamenti degli ortaggi, invece per le barbabietole da zucchero ci sono processi più complessi.

Le barbabietole vengono portate direttamente in zuccherificio, essendo impossibile lo stoccaggio; successivamente le radici vengono pulite e trinciate e si ha l'estrazione dello zucchero attraverso la diffusione, ovvero si getta acqua in senso contrario alle barbabietole. Infine si ha la concentrazione del sugo zuccherino, ottenendo cristalli solidi di zucchero greggio, che vengono depurati.

Le barbabietole a Torino vengono vendute già cotte al forno, private delle foglie e sporche di terra sulla buccia.
Al tocco, la pelle risulta coriacea ma non è molto resistente. L'interno è morbido al tatto e sembra gelatinoso ma abbastanza rigido; l'odore della barbabietola è similare a quello della terra (se non uguale), il gusto è particolare, leggermente dolciastro, personalmente non mi sembra un gusto cattivo ma neanche buono.

Le Moire - The Fades

Le Moire sono tre sorelle che compaiono nella mitologia greca, figlie di Zeus e di Temi. Vivevano nell'Olimpo e il loro compito era di tessere la vita degli uomini, pratica assimilabile al tenerne il controllo. Delle tre sorelle, Cloto filava lo stame, Lachesi girava il fuso per torcere il filo, cioè determinava cambiamenti buoni o cattivi nella vita delle persone; la sorella più vecchia, Atropo, invece utilizzava delle forbici per tagliare il filo della vita, quindi determinando la fine della vita delle persone. Le forbici rappresentano un perfetto strumento per identificare la netta separazione che si ha tra la vita e la morte, un taglio irreversibile.
